Eggless Tofu Salad

Makes enough for 4 large sandwiches or 6 small sandwiches
Ingredients
1 pound firm tofu, crumbled
1-2 stalks celery, thinly sliced
2 green onions, thinly sliced, or 2-4 tablespoons finely chopped onion
1/4 teaspoon turmeric
2 teaspoons prepared mustard
1 teaspoon tamari or soy sauce
1 tablespoon nutritional yeast
Black pepper and salt taste
Directions
  1. Mix all the ingredients together in a medium-to-large bowl. For best results, cover and let the flavors blend in the refrigerator for 2 hours or more.
  2. Serve in sandwiches or on a bed of lettuce or mixed greens.
